2.6 Food Safety
Notes
Foodborne illness is caused by germs in food. It can cause vomiting, diarrhea and fever.
- Clean: wash hands with soap for 20 seconds, and wash cutting boards and counters.
- Separate: keep raw meat, eggs and seafood away from foods that are eaten raw.
- Cook: cook foods to safe temperatures (use a food thermometer).
- Chill: refrigerate leftovers within 2 hours (1 hour if it is hot out).
- Wash fruits and vegetables under running water.
- Check expiration dates and do not eat food that smells or looks spoiled.
- Example: Using one cutting board for raw chicken and then for salad vegetables is cross-contamination.
